Makes 2
Ingredients:
50g amaranth flour
100 ml milk
1 egg
1 tablespoon oil
Directions:
1. Add the milk and egg to a bowl and whisk with a fork. Add the flour and mix to make a smooth batter. You can do everything in a blender; it’s quicker and you’ll get a nice smooth batter!
2. Grease a frying pan with a little oil and place on the fire until the pan is hot. Pour enough batter into the pan to coat the bottom with a thin layer. Cook the amaranth pancake until the underside is slightly brown and flip it over. Cook until the second side is ready too. Slide onto a plate.
3. Prepare the second pancake in the same way.
Tip:
Amaranth pancakes have a slightly salty, nutty taste, so they go best with savoury fillings.
You can of course eat them like regular pancakes also, with sugar, fruit, etc.
