Prepared in: 20 minutes
50g fresh ginger, properly washed (peeling isn’t necessary)
2 Tbsp baobab powder
¼ cup sticky brown sugar
2 large lemons, juiced
1 cup just-boiled water
750ml soda water
Lots of ice, to serve
1. Finely chop the fresh ginger and mix with the baobab powder.
2. Mix with the sugar and the lemon juice in a small pot, add 1 cup of hot water and simmer for 5-10 minutes or until the sugar has dissolved. Leave to cool and steep.
3. Strain the mixture and refrigerate until needed, top with soda water and serve, with ice.
