Egg-less Bao-Mayo

Perfect for sandwiches, burgers, or salad. Or serve as a dip with raw vegetables. The possibilities are endless!

Ingredients
¾ cup sunflower oil
2 Tbsp white wine vinegar (or apple cider vinegar)
3 Tbsp baobab powder
1 Tbsp honey
½ small garlic clove (finely chopped)
Pinch of salt
½ cup water

Preparation
Add all the ingredients (except the water) to a blender and blend on high for a minute, stopping once or twice to scrape down the sides and make sure everything is well combined.
Add the water and blend for another minute. It will thicken quickly.
Refrigerate.

Suggested Variations
Add spices (chillies, remove the seeds for more flavour and less heat) or herbs (our fav combination is a handful of fresh coriander and mint).

Add more or less baobab powder for different consistency.
