2 red peppers
1 green pepper
1 red onion
2 tins (or 800g) nyimo beans
Handful of fresh mint, flat leaf parsley, basil and/or coriander, chopped
Balsamic vinegar to taste
Salt and pepper to taste
1. Chop up cucumber, tomatoes, peppers and onion.
2. Drain and rinse the canned nyimo beans in a colander.
3. In a large salad bowl, toss together the chopped vegetables and nyimo beans.
4. Add balsamic vinegar, salt and pepper to taste. Garnish with fresh herbs.
5. Best served chilled.
