- 50g amaranth flour
- 100 ml milk
- 1 egg
- pinch of salt
- 1 tablespoon oil
- Put the milk and the egg in a bowl and whisk with a fork. Add the flour and mix to make a smooth batter. You can do everything in a blender; it’s quicker and you’ll get a nice smooth batter!
- Grease a frying pan with a little oil and place on the fire until the pan is hot. Pour enough batter into the pan to coat the bottom with a thin layer. Cook the amaranth pancake until the underside is slightly brown and flip it over. Cook until the second side is ready too. Slide onto a plate.
- Prepare the second pancake in the same way.
Amaranth pancakes have a slightly salty, nutty taste, so they are best with savoury fillings. You can of course eat them like regular pancakes also, with sugar, fruit, etc.
