Amaranth scones

Yield: about 35 scones when using a standard scone cutter

Amaranth scones


  • 1kg wheat flour
  • 250g amaranth flour
  • 300g sugar
  • 50g baking powder
  • 400g margarine
  • 4 eggs
  • 1.2 litres lacto or milk


  1. Pre-heat oven to 200°C.
  2. Mix wheat flour, amaranth flour, margarine, sugar and baking powder together.
  3. Beat the eggs and mix with the lacto/milk.
  4. Then mix all the ingredients together to form a smooth dough.
  5. Roll out the dough and cut out scones with a scone cutter.
  6. Place the scones on a baking tray in the oven and bake for 18-22 minutes.
