Banana Loaf (with local flour)
Ingredients
- 1 cup wholegrain oatmeal flour
- ¼ cup cake flour
- 1 cup sugar
- Pinch of salt
- 1 teaspoon bicarb soda
- 1 teaspoon baking powder
- ½ tsp mixed spice
- 1 tsp cinnamon
- ½ tsp ground cloves
- ½ tsp ground ginger
- ½ cup oil
- 1 egg
- 200ml lacto
- 2 ripe bananas
Instructions
- Preheat oven to 175 degrees C. Grease and flour a 20cm square pan.
- Mash the banana. Mix all dry ingredients together before incorporating the oil, egg and lacto. Add the bananas and mix well.
- Pour into baking tray (it should be about 3cm high) and cook until ready! About 40 minutes. Do not overcook.
