Marula Nut Meringues

Marula Nut Meringues


  • 4 egg whites
  • 125g marula nuts
  • 3 drops vanilla
  • 250g sugar
  • ½ teaspoon vinegar


  1. Beat egg whites until stiff.
  2. Add sugar, one spoon at a time, then add vinegar and vanilla and turn in nuts.
  3. Bake in 2 tins lined with foil for half an hour at 180°C. Or place in a slower oven for a lot longer to allow meringues to dry out in switched-off oven.
